Viktor Benes was a Czech-born baker who started in Chicago in the 1920s and moved his bakery to Southern California in 1946. Italian-born baker Ugo Mamolo and partner Ruggero Terzuolo later took over the business and partnered with Gelson's Markets in 1976, where its counters are best known for the pecan-filled Alligator coffee cake and European-style cakes.
